Spotted Dick is not the king of suet puddings but it certainly has the most memorable name - at least as far as North Americans are concerned.
Spotted Dicks are often featured dessert items on British menus and it’s not unusual to see many English men and women enjoying their Dicks covered in Bird’s custard or Tate & Lyle’s Golden Syrup.
The secret to making a great Spotted Dick is suet which is just a kind of fat.
What Is Suet?
Suet is the beef fat that surrounds the kidneys. It has a high melting point between 113°F and 122°F (45°C and 50°C). This is much higher than lard, (pork fat), which has a melting point between 86˚F and 104˚F (30˚C and 40˚C). Leaf fat lard, which is the highest grade, has a melting point between 109˚F and 118˚F (43˚C and 48˚C). Unfortunately leaf fat lard is rarely available commercially.

Not to worry, although true suet is made from animal fat you can buy a light version made entirely from vegetable fat. This is a commercial product made by Atora that can be used in any suet recipe.
