Mildred Ellen Wells 1906 - 2008
Mom lived for 102 incredible years. She went from horse drawn carriages and sailing ships to bullet trains and moon rockets.
She was not a fancy cook but everything she made tasted great. My dad grew much of what we ate in our garden so everything was always fresh and free of chemicals.
This book is a collection of some of her best recipes. I have just translated the quantities for the North American market.
I know she would be delighted to see all her recipes collected together so that you can continue to make these great tasting dishes.

Volume 1 - Fish & Chips
What Does Authentic Mean?
The signs proclaim “Authentic English Fish and Chips” in two foot high flashing neon lights but what they serve is fish fingers with shoestring fries. Trust me, that’s not authentic. I even had fish and chips in Phoenix, Arizona where the batter was made from corn meal.
You have a better chance of finding an honest politician in Washington, DC than finding authentic fish and chips in America.
What does that mean anyway? What is authentic English fish and chips?
Even in England the fish and chips range from mediocre to outstanding. At least you will never get a corn meal batter - Ugh!
When I was growing up in England we had access to at least three fish and chip shops (local chippies) within easy walking distance of our house.
Our favorite shop was next door to the Flying Eagle Pub. It’s gone now and the Flying Eagle has become an Indian restaurant. But I still fondly remember picking up six-pennyworth of chips as I walked home from school.
