2 cups bite-size cauliflower florets
1 tablespoon avocado oil
¼ cup almond flour
¼ cup nutritional yeast
½ teaspoon garlic powder
¼ teaspoon sea salt
¼ teaspoon freshly ground black pepper
FOR THE SAUCE
1 cup cubed mango
1 habanero pepper
2 garlic cloves
2 tablespoons apple cider vinegar
⅛ teaspoon sea salt
FOR ASSEMBLING
½ to 1 cup mixed salad greens
2 fresh collard green leaves
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
TO PREPARE THE CAULIFLOWER AND BREADING
In a medium bowl, toss the cauliflower with the avocado oil to coat.
In a small bowl, stir together the almond flour, nutritional yeast, garlic powder, salt, and pepper until well combined.
Add the breading mixture to the cauliflower, and toss until all pieces are covered. Transfer to the prepared baking sheet.
Roast the cauliflower for 30 to 35 minutes, or until soft.
