1/2 tsp coconut oil
1 red onion, chopped

3–4 small red or green chillies, finely chopped

2 fresh or dried kaffir lime leaves
3 plum tomatoes, chopped
1 sweet potato, diced
400ml (14fl oz/1 2/3 cups) coconut milk
150g (5oz/generous 2/3 cup) split mung beans, soaked for 1 hour and cooked 1
handful of baby spinach leaves (optional)
Coriander (cilantro), chopped, to garnish

Heat the coconut oil in a large pan, then wipe the pan with a piece of kitchen paper (paper towel). Add the onion, garlic, ginger, chillies and soya bean paste and sauté for 2–3 minutes to soften the onion.
