FOR THE ARTICHOKES
1 (14-ounce) can artichoke hearts, drained
1 tablespoon avocado oil
⅛ teaspoon sea salt
⅛ teaspoon freshly ground black pepper
⅛ teaspoon garlic powder
⅛ teaspoon ground paprika
FOR THE DRESSING
2 tablespoons avocado oil
2 tablespoons apple cider vinegar
1 tablespoon sesame seeds
1 tablespoon brown rice syrup
1 shallot, diced
⅛ teaspoon sea salt
⅛ teaspoon freshly ground black pepper
FOR ASSEMBLING
2 to 4 cups mixed salad greens
Preheat the oven to 425°F. Line a baking sheet with parchment paper.
TO PREPARE THE ARTICHOKES
Cut off the artichoke tips, and then cut each heart in half. Rub avocado oil all over the artichoke pieces.
In a small bowl, mix together the salt, pepper, garlic, and paprika. Place the artichokes on the prepared baking sheet, and sprinkle the seasoning over them, tossing to coat.
Roast the artichoke pieces for 30 minutes, tossing halfway through.
