2 large sweet potatoes
2½ cups broccoli
2½ cups almonds
½ cup fresh basil leaves
¼ cup onion
2 garlic cloves
2 tablespoon avocado oil
¼ cup nutritional yeast
½ teaspoon sea salt
Preheat the oven to 350°F.
Pierce the sweet potatoes all over with a fork. Place the sweet potatoes on a baking sheet, and bake for 1 hour and 15 minutes, or until they are soft.
Meanwhile, prepare the pesto. In a food processor, pulse the broccoli, almonds, basil, onion, garlic, avocado oil, nutritional yeast, and salt until the broccoli and almonds are ground into tiny pieces. Adjust the seasonings, if necessary.
When the potatoes are ready, cut them in half lengthwise, and gently scoop out the insides of the potato, taking care not to tear the potato skin; add the baked potato filling to a medium bowl, and add the pesto mixture; gently stir together.
Divide the mixture in half, add each half back into the two empty potato skins, and serve.
