2 cups red lentil pasta
¼ cup avocado oil
2 tablespoons apple cider vinegar
1 tablespoon freshly squeezed lemon juice
1 teaspoon dried oregano
2 pinches sea salt
2 pinches freshly ground black pepper
FOR THE VEGGIES
1 tablespoon avocado oil
6 asparagus stalks, diced
1 cup diced orange bell pepper
⅓ cup diced red onion
½ zucchini, sliced
½ summer squash, sliced
2 garlic cloves, crushed
TO PREPARE THE PASTA AND DRESSING
Cook the pasta according to package directions.
While the pasta cooks, in a small bowl, whisk together the avocado oil, vinegar, lemon juice, oregano, salt, and pepper until well combined. Adjust the seasonings, if necessary.
