FOR THE DRESSING
1 avocado, roughly chopped
1 cup fresh cilantro
2 garlic cloves
½ to 1 jalapeño
2 tablespoons water
1 tablespoon freshly squeezed lime juice
1 teaspoon avocado oil
½ teaspoon sea salt
FOR THE VEGGIES
½ orange bell pepper
¼ cup red onion
1 medium carrot
½ cup broccoli florets
½ to 1 jalapeño
FOR ASSEMBLING
2 to 4 cups mixed salad greens
TO PREPARE THE DRESSING
In a blender, blend together the avocado, cilantro, garlic, jalapeño, water, lime juice, avocado oil, and salt until creamy and smooth. Adjust the seasonings if necessary.
TO PREPARE THE VEGGIES
In a food processor, process the bell pepper, onion, carrot, broccoli, and jalapeño until they are chopped into tiny pieces, taking care not to overprocess.
TO ASSEMBLE
In a medium bowl, toss together the salad greens and veggies. Transfer the salad to 2 plates, drizzle with the dressing, and enjoy.
