8 small new potatoes, sliced thin
1½ onions, diced small
1 tablespoon avocado oil
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 tablespoon chopped fresh tarragon

Preheat the oven to 375°F
In a large bowl, mix the potatoes and onions with the avocado oil to coat. Add the salt, pepper, and tarragon, and toss again.
In an 8-by-8-inch baking dish, layer the potatoes in 3 rows. Overlap and stand them up as necessary to fit in the dish. Sprinkle the diced onions between the potato slices and rows.
Bake for about 45 minutes, or until the potatoes are soft.
